Balayage is painted on by hand rather than packed into foils from the scalp. That is what gives it a soft start high up the strand and brightness that builds toward the ends - and it is also why the grow-out is gradual instead of a line.
Ombre works the same way with a more deliberate gradient from depth at the root to light through the ends. Your stylist will talk through which reading of it suits your hair, your length and how often you want to come back.
